Creamy Cucumber Tomato Salad

Ingredients
- 1 pint cherry tomatoes* sliced into halves or quarters
- 3 cucumbers* cut into chunks
- 2-3 sprigs dill* fresh
- 1 cup greek yogurt or sour cream
- juice of one lemon or a splash of white vinegar
- salt+ pepper to taste
Instructions
- Combine all ingredients into a large bowl and mix.
- Taste and adjust seasoning. Serve immediately, or chill in fridge until you're ready to eat!
Notes
Tip: taste your cucumber before mixing in. If it's on the bitter side, peel it. If not, no need to peel! You can substitute regular tomato chunks for the cherry tomatoes, but it may be a bit more watery. Drain them or dry them a bit with a paper towel to prevent a wet salad. Add red onion, radish, or whatever else is calling to you for an extra twist!
