Zucchini Roll-Ups

  • Cut off the zucchini stems and slice lengthwise using a mandoline, knife, or vegetable peeler.
  • Fry the zucchini strips in olive oil or butter until soft and starting to brown. Remove from pan and let rest on a paper towel-lined plate.
  • In a medium bowl, mix together cream cheese, garlic scapes, herbs, salt, and pepper.
  • When zucchini has cooled slightly, spread on a thin layer of cream cheese mixture. Roll up the zucchini, and secure with a toothpick. Enjoy!
