Chimichurri Sauce
Chimichurri is an Argentinian staple used as a sauce or a marinade. Excellent on top of steak, chicken, lamb, tacos, or pasta. Experiment with different herbs to fit your use: maybe add lovage for a chicken dish, or cilantro for a Mexican dish. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer’s market.
Ingredients
- 1 cup fresh parsley* stems removed
- 3 cloves garlic*
- 2 tbsp oregano* fresh, or sub 2 teaspoons dried oregano
- ⅓ cup extra virgin olive oil
- 2 tbsp red wine vinegar or white wine vinegar
- ½ tsp sea salt
- ⅛ tsp black pepper freshly ground
- ¼ tsp red pepper flakes
Instructions
- Finely chop the parsley, fresh oregano, and garlic (or pulse in a food processor until all ingredients are chopped into small pieces). Place in a small bowl.
- Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Adjust seasonings.
- Serve immediately or refrigerate. If chilled, return to room temperature before serving. Will keep in the refrigerator for a week or two.
