Chimichurri

Chimichurri Sauce

Chimichurri is an Argentinian staple used as a sauce or a marinade. Excellent on top of steak, chicken, lamb, tacos, or pasta. Experiment with different herbs to fit your use: maybe add lovage for a chicken dish, or cilantro for a Mexican dish. Ingredients
  

  • 1 cup fresh parsley* stems removed
  • 3 cloves garlic*
  • 2 tbsp oregano* fresh, or sub 2 teaspoons dried oregano
  • cup extra virgin olive oil
  • 2 tbsp red wine vinegar or white wine vinegar
  • ½ tsp sea salt
  • tsp black pepper freshly ground
  • ¼ tsp red pepper flakes

Instructions
 

  • Finely chop the parsley, fresh oregano, and garlic (or pulse in a food processor until all ingredients are chopped into small pieces). Place in a small bowl.
  • Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Adjust seasonings.
  • Serve immediately or refrigerate. If chilled, return to room temperature before serving. Will keep in the refrigerator for a week or two.
