Elote (Grilled Mexican Street Corn)

Ingredients
- 6 ears sweet corn* husks removed
- ½ cup Mexican crema or sour cream
- ½ cup mayonnaise
- ½ cup cilantro* chopped
- 1 clove garlic* minced
- ¼ tsp chili powder or to taste
- 2 tsp lime zest from 1 lime
- 2 tbsp lime juice from 1 lime
- ½ cup cotija cheese crumbled (sub feta or parmesan if necessary)
- lime wedges, for serving
Instructions
- Preheat the grill to 400℉
- Whisk together the crema, mayonnaise, cilantro, garlic, chili powder, lime zest and juice. Set aside.
- Grill the corn by setting the shucked ears directly on your grill's grates for about 3 minutes on each side until dark golden brown. When all sides are done, remove from grill.
- Using a basting brush or a spoon, coat each ear into the prepared sauce. Sprinkle with cojita (or parm or feta) cheese and serve immediately!
