  • In a large stockpot, add diced bacon and cook until crispy. Transfer bacon to a plate, reserving the grease (if using).
  • Add onion and sauté for 5 minutes, until soft. Stir in garlic and sauté until fragrant. Stir in the flour to coat onion and garlic and cook for 1 minute. Then stir in the stock and milk, mix well and add potatoes.
  • Continue cooking until barely simmering. Reduce heat to low, cover, and simmer until potatoes are soft, about 15 minutes. Turn heat to very low.
  • Stir in cheddar and yogurt and reserved bacon. Serve warm, garnish with desired toppings. Enjoy!
