Potato Soup
A warm comfort food soup for cold fall and winter days. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer's market.

- Large Stockpot
Ingredients
- 5 slices bacon*
- 3 tbsp reserved bacon* grease or butter
- 1 onion* chopped
- 4 cloves garlic* minced
- ¼ cup all-purpose flour
- 2 cups chicken* stock
- 2 cups milk warmed
- 1½ lbs potato* diced
- ½ cup greek yogurt plain
- 1 cup sharp cheddar shredded
- salt + pepper
- chives* for topping
Instructions
- In a large stockpot, add diced bacon and cook until crispy. Transfer bacon to a plate, reserving the grease (if using).
- Add onion and sauté for 5 minutes, until soft. Stir in garlic and sauté until fragrant. Stir in the flour to coat onion and garlic and cook for 1 minute. Then stir in the stock and milk, mix well and add potatoes.
- Continue cooking until barely simmering. Reduce heat to low, cover, and simmer until potatoes are soft, about 15 minutes. Turn heat to very low.
- Stir in cheddar and yogurt and reserved bacon. Serve warm, garnish with desired toppings. Enjoy!
