  • Chop the vegetables into 1 inch pieces. Cut bacon into ½ inch squares and fry to desired crispiness. Remove bacon from pan, reserving the grease.
  • Add all vegetables and garlic to pan and fry until potatoes are tender, stirring frequently. Add bacon back and stir gently. Best with an over-easy egg on top!
