Ultimate Greek Chopped Salad
A fresh and easy chopped salad, great as a meal or side. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer's market.

- Large Bowl
Ingredients
Salad
- 1 cucumber*
- 5 tomato*
- 1 bell pepper*
- ½ onion* red
- 15 oz garbanzo beans rinsed and drained
Dressing
- 3 tbsp red wine vinegar
- 2 tbsp olive oil
- 2 tsp dried oregano
- ¼ tsp salt
Instructions
- Make the dressing in a small bowl by whisking all dressing ingredients to combine. Set aside.
- Dice the cucumber, onion, bell pepper, and tomatoes (removing excess liquid).
- Put vegetables and beans in a large bowl. Add dressing and toss to combine.
- Enjoy or refrigerate!
