Bacon & Brussels Sprouts
Bacon and brussels complement each other so nicely in this something-different side dish. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer’s market.

Ingredients
- ½ lb bacon* chopped
- 2 tbsp butter
- 1 lb brussels sprouts* rinsed, trimmed, and quartered
- 1 onion* chopped
- salt + pepper to taste
- 1 tbsp lemon juice fresh-squeezed
Instructions
- Cook bacon in large skillet with a couple tablespoons of water until crispy. Remove to a paper or tea towel to cool and then chop into bite-sized pieces.
- Using the same skillet with the bacon fat, melt the butter over high heat and add the onions and brussels sprouts. Cook, stirring occasionally, and adding water as necessary, until sprouts are golden brown, 8 to 10 mins.
- Season with salt and pepper, lemon juice, and gently toss bacon back in and serve. Grate some parmesan on top if desired.
