Crock Pot Minestrone

Ingredients
- 1 onion* chopped
- 2 carrot* sliced
- 2 stalks celery* sliced
- 1 zucchini* chopped
- 1/3 lb green beans* snapped in half or thirds
- 4 cloves garlic* minced
- 12 oz kidney beans cooked
- 12 oz cannellini beans or Northern beans, cooked
- 2 lbs tomatoes* diced
- 1 tsp basil* dried
- 1 tsp oregano* dried
- 5 cups chicken broth* or vegetable broth
- 1 cup rice or small pasta, uncooked
- salt + pepper to taste
- lemon juice fresh squeezed
- parmesan cheese
Instructions
- Add all ingredients, except rice/pasta, to 6-quart slow cooker
- Cover and cook on high for 4 hours, or low for 7-8 hours.
- Add uncooked rice or pasta and season to taste. Continue cooking on low for 45 minutes or until rice is cooked through.
- At serving, add a dash of lemon juice and parmesan cheese.
