Apple, Mint, Honey Lemonade (with Ginger)
This colorful lemonade can be made ahead and will impress your guest with its unique sweet and lemony flavor. Throw in some extra fresh lemons, herbs or berries and it will really stand out! Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer’s market.
Equipment
- 1 Pot medium
- 1 Juicer and Zester for lemon optional (could use a spoon for juicing and a knife for zest)
- 1 Strainer fine mesh
Ingredients
- 2 apples* Sweet local variety is best (or can use Gala, Red or Golden Delicious, etc. Also consider 1-2 extra for garnish)
- 2 cups honey*
- 6 lemons juiced and zest (consider 2-4 extra lemons for garnish)
- 1/2 - 1 inch ginger
- 2 sprigs mint*
- water and ice
- herbs* other optional herbs include lemon balm, lavender, basil etc.
- berries* optional
- orange juice optional
Instructions
- Place the desired amount of chopped ginger, apple halves, honey, a spring of mint, lemon juice, and lemon zest into a medium-large pot.
- Bring to a boil and then reduce to a simmer for 20 - 30 minutes.
- Strain with a fine mesh strainer fitted on a large bowl, use a wooden spoon to force as much liquid as possible into the bowl.
- When ready to serve, dilute it with water and ice to taste. Throw in some additional lemon and/or slices, mint leave, frozen berries, and/or other fresh herbs. Enjoy!
