Asparagus and Bacon Quiche
This delicious springtime quiche is courtesy of the Black Sheep Coffee Baa in Greene, Iowa. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer’s market.

- 1 Pie plate
Ingredients
- 1 pie shell
- 1 cup milk
- 5 eggs* slightly beaten
- 4 slices bacon*
- 1 cup cheese swiss, gruyere', asiago etc.
- 8 oz asparagus*
- 2-3 green onions* sliced
- salt & pepper
Instructions
- Preheat oven to 425.
- Place pie shell in greased pie plate.
- Cook bacon until crisp. Cool. Crumble.
- Cut asparagus into 1/2" pieces.
- Fill pie shell with bacon, cheese, asparagus and onion. Season with salt & pepper.
- Mix milk and eggs. Pour into pie shell. Brush crust with egg white.
- Bake 15 minutes.
- Reduce heat to 325 and bake for additional 20-25 minutes or until knife inserted comes out clean.
- Cool 10 minutes before cutting.
