Beef Tacos
Everyone loves taco night! Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer's market.

Ingredients
Taco Filling
- 1 onion* small, divided
- 1 lb beef* ground
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp coriander or sub more cumin
- ½ tsp dried oregano
- ¼ tsp cayenne optional
- 1 clove garlic* minced, more to taste
- 1 cup chicken broth* or chicken stock or vegetable stock
- 1 tbsp tomato paste
- 2 tsp apple cider vinegar
- 1 pinch brown sugar optional
Instructions
- Chop ½ of the onion and add along with the beef into a large pan. Over medium heat, break up the beef. Add the chili powder, cumin, and garlic. Continue breaking up while cooking until meat is brown.
- Add the tomato paste, broth, apple cider vinegar, and a pinch of brown sugar (optional). Bring to a boil and then reduce to a simmer.
- Let simmer until liquid is absorbed, or add more liquid and continue to simmer for a more tender taco filling.
- Meanwhile, prepare your toppings. Shred the cheese, chop the other half of the onion, wash and chop lettuce, and prepare your salsa of choice.
- Dish in shells or tortillas and top with all of your favorite toppings!
