Berry Quinoa Salad
A refreshing salad using local berries and herbs. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer's market.

Salad
- 2 cups quinoa cooked
- 1 cup almonds roughly chopped
- 5 cups strawberries*
- or blueberries*
- or raspberries*
- or blackberries*
- 1 tbsp mint* finely chopped
- 1 tbsp basil* finely chopped
Instructions
- Make the dressing: in a small bowl or jar, whisk together orange zest and juice, lemon/lime juice, honey, mint, and basil. Set aside.
- In a large bowl, combine cooked quinoa, berries, almonds, mint, and basil. Gently stir. Drizzle dressing and stir again. Serve.
