Delicata Squash Onion-y Rings
Delicata squash are an unsung fall hero. The skin is so thin that you don’t need to peel it and it’s filled with vitamins – making this a low-prep, easy, healthy side or snack. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer’s market.
Ingredients
- 1 delicata squash*
- 1 tbsp olive oil more to coat, if necessary
- ¼ tsp salt
- ¼ tsp black pepper
- ½ tbsp onion powder more to taste
Instructions
- Preheat oven to 425. Rinse and dry squash. Chop ends and discard.
- Slice the squash into 1/4 in circles. Use a spoon to remove seeds from each ring.
- Toss rings with oil and seasonings, making sure to coat entirely.
- Spread rings onto a baking sheet evenly, taking care not to overlap. Sprinkle more salt if desired.
- Bake for 20 minutes. Flip and roast until golden brown, up to an additional 15 minutes. Enjoy!
