German Red Cabbage

Ingredients
- 2 lbs red cabbage*
- 2 cups zucchini* or apple*
- 1 red onion*
- 2 cloves garlic* minced
- ¼ tsp nutmeg
- ¼ tsp ground cinnamon
- ¼ tsp cloves ground
- ¼ cup honey* or brown sugar
- 3 tbsp apple cider vinegar
- 1 tbsp butter
- ½ cup water
- salt + pepper
Instructions
- First wash your produce. Peel and seed the apples or zucchini then cut into cubes. Slice the onion and red cabbage.
- In a Dutch Oven or heavy-bottomed pot melt the butter on medium-high heat. Sauté the diced onion, zucchini or apples, and garlic for 2-3 minutes.
- Add the red cabbage and vinegar, stir until combined. Then add the remaining ingredients and stir.
- Reduce the heat to medium, cover the pot, and simmer for 50-60 minutes, until the cabbage is soft but not mushy.
- Adjust the ingredients to your liking and serve hot.
