Ground Lamb with Potatoes from Jóia Food Farm
Adapted from Serious Eats, this recipe comes recommended from local producer Jóia Food Farm, a diverse livestock and organic grain farm located near Charles City.Ingredients with an asterisk (*) are available seasonally right here in North Iowa! - Dutch Oven or large skillet
Ingredients
- 3 tbsp canola oil
- 2 lb Joia Food Farm ground lamb*
- 6 potatoes* small, or 3 large. Cut into ¾ inch cubes. Peeling optional.
- 1 onion* chopped
- 3 cloves garlic* minced
- 1 tsp fresh ginger grated
- 3 tbsp tomato puree
- 1 tsp ground cumin
- 2 tsp ground coriander
- ¼ tsp cayenne pepper
- 2 cinnamon sticks
- 1 ¾ tsp salt
- ¼ tsp ground turmeric
- 3 tbsp plain yogurt
Instructions
- Heat oil in a large skillet or a Dutch oven/heavy bottomed pot over medium heat, then add the ground lamb, potatoes, and onion and cook for 10 minutes, taking care not to mash the potatoes. The meat should be mostly brown.
- Add the garlic, ginger, seasonings (except turmeric) and a couple of cinnamon sticks. Stir-fry for 1-2 minutes.
- Cover with a lid for 2-3 minutes or until the potatoes are cooked through.
- Remove the cinnamon sticks and discard (compost if possible!).
- Add the yogurt and turmeric and mix gently, but well. Taste and adjust salt and pepper to taste.
- Serve over basmati rice.
