Homemade Bone Stock
Delicious and healthy stock that's so easy to make. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Ingredients
- beef bones* or pork or chicken
- water enough to cover bones
- salt to taste
- 1 large onion* sliced
- 2-4 ribs celery*
- 3-5 cloves garlic*
- 5 mushrooms* shiitake, etc, fresh
- 2 carrots* optional
- herbs* thyme, tarragon, rosemary, parsley, etc. (any combination...optional)
Instructions
- Place the bones, roughly chopped veggies, herbs and salt in a large pot. Bring to a boil. Reduce heat and simmer for 6-10 hours.
- You can also use an Instant Pot, or other pressure cooker. Place all ingredients into the pot, seal lid and press the “soup/broth” button for 60-90 minutes and then slow cook for an additional 4-6 hours (or overnight).
- Strain broth, cool and then chill in refrigerator overnight. Skim off excess fat.
- Use in your favorite soup or stew or freeze for later.
