Mixed Berry Crumble

Light yet still satisfying, this dessert features warm berries topped with an oat crumble. Serve with ice cream, whipped cream, or just eat it plain. Ingredients
  

Mixed Berries

Crumble

  • ½ cup rolled oats
  • ½ cup flour
  • 6 tbsp coconut sugar can sub brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • ¼ cup coconut oil melted. Can sub butter

Instructions
 

  • Preheat the oven to 375°F
  • Wash and chop fruit into 1-inch pieces (if needed). In a large mixing bowl, combine fruit, dates, lemon juice, and cornstarch. Toss to coat. Empty mixture into a cast-iron skillet or oven-safe pan.
  • In a separate bowl, combine oats, flour, sugar, cinnamon, and salt. Stir. Add melted coconut oil and use fingertips to mix oil into the ingredients until a crumble consistency forms.
  • Sprinkle crumble topping evenly over fruit mixture. Bake for 35 minutes, or until fruit is bubbling and tender.
  • Let cool for 10 minutes, then top with ice cream, whipped cream, or your topping of choice.
