No-Bake Granola Bars (or Bites)

Equipment

  • Small Saucepan
  • Large Bowl
  • Casserole Dish

Ingredients
  

  • 1 cup nut butter
  • ½ cup honey*
  • 2 cups rolled oats Or gluten free oats
  • 1 cup rice cereal or a combination of flaxseed, chia seeds, hemp hearts, rice cereal, peanuts, slivered almonds, walnuts, etc
  • sea salt
  • 1 tsp coconut oil optional

Instructions
 

  • Over very low heat stir together the nut butter and honey until just combined. Remove from heat. Pour into a large mixing bowl and add remainder of ingredients. Stir, stir, stir until ingredients are coated. If mixture is too dry, add melted coconut oil 1 tsp at a time, stirring well between each tsp, until mixture is fully coated.
  • For bars: Dump mixture into a casserole dish and press down with parchment paper or your hands. Refrigerate to harden up before cutting into square or rectangular bars and serving
    For bites: Scoop ⅛ cup or so of granola mixture with your hands and shape. Put onto a cookie sheet with parchment paper. Refrigerate to harden up a bit (if you can wait that long!) and serve.
