No-Bake Granola Bars
A quick and easy snack for all ages using local honey and ingredients you may have in your pantry! Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer's market.
Equipment
- Small Saucepan
- Large Bowl
- Casserole Dish
Ingredients
- 1 cup nut butter
- ½ cup honey*
- 2 cups rolled oats
- 1 cup rice cereal or a combination of flaxseed, chia seeds, hemp hearts, rice cereal, peanuts, slivered almonds, walnuts, etc
- sea salt
- 1 tsp coconut oil optional
Instructions
- Over very low heat stir together the nut butter and honey until just combined. Remove from heat. Pour into a large mixing bowl and add remainder of ingredients. Stir, stir, stir until ingredients are coated.
- For bars, dump mixture into a casserole dish and press down with parchment paper or your hands. For balls, scoop ⅛ cup or so with your hands and shape. Put onto a cookie sheet with parchment paper. Refrigerate to harden up a bit (if you can wait that long!) and serve.
