Ratatouille
A tasty way to enjoy the bountiful harvest of summer. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer's market.

- Large Skillet
Ingredients
Instructions
- Rough chop all of your vegetables
- Place pan over medium heat and drizzle with olive oil
- Add garlic to sauté for just a couple stirs, then add in the rest of the vegetables
- Turn heat to medium-high. Cover and cook for 20 minutes.
- Taste, adding salt and pepper to taste.
- Serve as-is or on rice, pasta, chicken, or beef. Enjoy!
