Sautéed Celery and Leeks

Ingredients
  

  • 1 tbsp butter* or fat of choice
  • 2 1/2 cups leeks* thinly sliced and washed thoroughly
  • 3 1/2 cups celery* thinly sliced
  • 1/2 tsp lemon zest
  • 1 clove garlic* minced
  • salt + pepper

Instructions
 

  • Melt butter in a large skillet over medium-high heat. Add leeks and cook, stirring occasionally, until just tender, about 3 minutes. Then add celery to skillet.
  • Cook, covered and stirring occasionally, until celery is tender, about 5 minutes. Add lemon zest and garlic; cook, stirring, 1 minute more. Season to taste with salt and pepper. Enjoy!
