Simply Perfect Meatballs

Ingredients
- 1 lb ground pork*
- ¼ cup plain bread crumbs
- ¼ cup milk
- ½ green onions*
- 1 Tbsp olive oil
- 1 egg*
- 2 tsp garlic scapes* or garlic
- 1 tsp salt & pepper each
- 1 tsp dried oregano
Instructions
- Let meat come to room temperature. Soak ¼ cup bread crumb in a small bowl with ¼ milk for 20 minutes. Chop 1/2 a bunch of green onions keeping white and green parts separate.
- Heat olive oil in a skillet over medium heat. Cook white parts of onions in hot oil until soft about 3 minutes. Add green parts and cook/stir for an additional 1-2 minutes. Add garlic and stir. Turn off heat.
- Combine onions, bread crumb mixture, egg, and seasonings into meat. Using wet hands, form meat mixture into balls about 1½ inch in diameter.
- Arrange onto a greased baking sheet (or place on parchment paper on a baking sheet.) Preheat oven to 425 degrees.
- Bake meatballs for 20 minutes or until browned and cooked through.
- Remove meatballs from the oven and serve immediately.
