Garlic Scape Pesto

Equipment
- Blender or Food Processor or Mortar and Pestle
- Kitchen Knife
Ingredients
- ½ cup garlic scapes*
- 1 cup spinach* or arugula*
- ¼ cup walnuts or pine nuts, toasted
- ¼ cup parmesan cheese freshly grated
- 2 tsp lemon juice
- ¼ cup olive oil
- salt + pepper to taste
Instructions
Mechanical Method
- Place garlic scapes, greens, nuts, parmesan, and lemon juice in a food processor or blender. Blend until a rough paste is formed.
- Slowly add the olive oil, pulsing until you reach your desired smoothness.
- Season with salt and pepper to taste.
- Serve! Spread on bread, pasta, fish, pizza, or crackers. Freeze for later use.
Handmade Method
- Mince garlic scapes very finely and add to mortar and pestle. Repeat with greens. Crush and pound until a paste forms. Repeat with nuts, then cheese, then olive oil until you reach desired texture.
