Sweet Corn Fritters

Ingredients
- ¾ c unbleached all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 2 eggs*
- ½ c milk of choice
- 1 tsp salt
- ½ tsp cayenne pepper
- 4 c sweet corn* cut off the cob, fresh
- 3 tsp chives* fresh, chopped
- canola oil for frying
- powdered sugar optional
- maple syrup* optional
- sour cream optional
Instructions
- Stir together the flour, sugar, and baking powder. Add in the eggs, milk (of choice), salt, and cayenne and combine to create a batter. Add the corn and chives and stir.
- Heat canola oil to 365°. When the oil is heated, drop a 1-2 tablespoon scoops into the oil and cook for about 2 minutes. Flip and continue until desired color.
- Transfer each fritter to a paper towel to soak up oil. Serve as-is or with sour cream, maple syrup, or dusted with powdered sugar!
