Ingredients
  

  • ¾ c unbleached all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 2 eggs*
  • ½ c milk of choice
  • 1 tsp salt
  • ½ tsp cayenne pepper
  • 4 c sweet corn* cut off the cob, fresh
  • 3 tsp chives* fresh, chopped
  • canola oil for frying
  • powdered sugar optional
  • maple syrup* optional
  • sour cream optional

Instructions
 

  • Stir together the flour, sugar, and baking powder. Add in the eggs, milk (of choice), salt, and cayenne and combine to create a batter. Add the corn and chives and stir.
  • Heat canola oil to 365°. When the oil is heated, drop a 1-2 tablespoon scoops into the oil and cook for about 2 minutes. Flip and continue until desired color.
  • Transfer each fritter to a paper towel to soak up oil. Serve as-is or with sour cream, maple syrup, or dusted with powdered sugar!
