Sweet Potato Fries with Garlic Aioli

Ingredients
- 2 lbs sweet potato* cut into ¼ inch sticks
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- salt + pepper to taste
Garlic Aioli
- 1 cup mayonnaise
- 1 tsp smoked paprika
- 1 clove garlic* minced, more to taste
- pepper fresh-cracked, to taste
- 1 tbsp lemon juice freshly squeezed
Instructions
- Preheat oven to 400° F.
- If making the aioli: Combine all ingredients in a small bowl and stir well. Taste and adjust seasonings. Chill until ready to use.
- Line baking sheets with parchment paper. In a large bowl toss the sweet potato sticks with olive oil and seasonings.
- Spread the potatoes onto 1 large (or two small) rimmed baking sheets. Bake for 15 minutes, flip, and continue to cook until crispy, about 10 more minutes.
