Winter Squash Frittata

A versatile frittata featuring fall and winter ingredients! You can use butternut, pie pumpkin, acorn, kabocha, or even sweet potatoes. Ingredients
  

  • 8 tbsp bacon fat* or other cooking fat
  • 1 winter squash* about 2 lbs, butternut, buttercup, pumpkin, kabocha, etc. Peeled, seeded, and cut into ½ inch cubes
  • salt + pepper
  • nutmeg
  • 2 onions* yellow, small, chopped
  • 1 tbsp sage* minced
  • 8 leaves sage* left whole
  • 10 eggs*
  • 3 tbsp heavy cream
  • 8 oz goat cheese crumbled

Instructions
 

  • Heat 2 tbsp cooking fat in a cast-iron or oven safe pan over medium-high heat. Add the squash and season with salt, pepper, and nutmeg. You may have to split the squash into two batches, with another 2 tbsp cooking fat. Cook until squash begins to soften and brown, ~10 minutes. Transfer it to a bowl.
  • Warm another tbsp of cooking fat in the pan. Cook the onion with salt and pepper until tender, ~7 minutes. Add it to the bowl with the squash.
  • Reduce heat to medium and melt 2 tbsp cooking fat. Add minced sage and cook until bright green, ~2 minutes. Add to bowl with squash and onions. Add the whole sage leaves to the pan and cook for 2 minutes until crisp. Set leaves aside.
  • In a large bowl, whisk together eggs and cream. Add cheese, squash, onion, and minced sage.
  • Preheat your oven broiler. Add 1 tbsp cooking fat to the pan, add the egg mixture and cook for 4 minutes, lifting the edges to let the uncooked eggs flow underneath. Top with the sage leaves, then let cook until eggs are almost set, ~5 minutes. Broil the frittata on high until it sets and puffs up, about 3 minutes.
