Ingredients
1sweet potato*per person
salt + pepperto taste

¼cupbacon*chopped
¼cupgreek yogurt

½cupguacamole
½cupapple radish slaw

Instructions
Preheat the oven to 425°F and place a piece of foil on a baking sheet. Use a fork to poke holes into the sweet potatoes, set them on the baking sheet.
Roast for 40 to 50 minutes, or until puffed up and soft inside when pierced with a fork.
Top with protein to make it a meal or butter for a side dish.
