Taco Filling
1onion*small, divided
1lbbeef*ground
2tbspchili powder
1tspcumin
1tspcorianderor sub more cumin
½tspdried oregano
¼tspcayenneoptional
1clovegarlic*minced, more to taste
1cupchicken broth*or chicken stock or vegetable stock
1tbsptomato paste
2tspapple cider vinegar
1pinchbrown sugaroptional
Toppings
8tortillasor hard shells
1cupsalsa
1cupcheddar cheeseshredded
1jalapeño*optional
1bunchcilantro*
1bunchlettuce*or microgreens*
1cupsour creamor greek yogurt
Instructions
Chop ½ of the onion and add along with the beef into a large pan. Over medium heat, break up the beef. Add the chili powder, cumin, and garlic. Continue breaking up while cooking until meat is brown.
Add the tomato paste, broth, apple cider vinegar, and a pinch of brown sugar (optional). Bring to a boil and then reduce to a simmer.
Let simmer until liquid is absorbed, or add more liquid and continue to simmer for a more tender taco filling.
Meanwhile, prepare your toppings. Shred the cheese, chop the other half of the onion, wash and chop lettuce, and prepare your salsa of choice.
Dish in shells or tortillas and top with all of your favorite toppings!
