A fun twist on pizza night! This savory-and-sweet dish is full of local produce and creativity. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer’s market.
¼butternut squash*peeled and shaved into ribbons using a vegetable peeler
8leavessage*chopped
salt + pepper
red pepper flakes
2ozblue cheeseoptional
honey*for drizzling
Instructions
Preheat the oven to 450°F. Grease a baking sheet or pizza pan.
Heat the olive oil in a medium skillet over medium-high heat. Add the onion and cook until fragrant, about 8 minutes.
On a lightly floured surface, roll the dough into a ¼-inch thickness. Transfer the dough to the prepared pizza pan. Spread the apple butter in the thin layer over the dough, leaving a 1-inch border. Spread the apple slices and onions on the crust.
Add the mozzarella and cheddar, then top with the butternut squash. Add the sage, and a pinch of salt, pepper, and red pepper flakes. Add blue cheese if using.
Bake until crust is golden and cheese has melted, about 15 minutes. Drizzle with honey and more red pepper flakes to taste.
