Chimichurri is an Argentinian staple used as a sauce or a marinade. Excellent on top of steak, chicken, lamb, tacos, or pasta. Experiment with different herbs to fit your use: maybe add lovage for a chicken dish, or cilantro for a Mexican dish. Ingredients
1cupfresh parsley*stems removed
3clovesgarlic*
2tbsporegano*fresh, or sub 2 teaspoons dried oregano
⅓cupextra virgin olive oil
2tbspred wine vinegaror white wine vinegar
½tspsea salt
⅛tspblack pepperfreshly ground
¼tspred pepper flakes
Instructions
Finely chop the parsley, fresh oregano, and garlic (or pulse in a food processor until all ingredients are chopped into small pieces). Place in a small bowl.
Stir in the olive oil, vinegar, salt, pepper, and red pepper flakes. Adjust seasonings.
Serve immediately or refrigerate. If chilled, return to room temperature before serving. Will keep in the refrigerator for a week or two.
