Ingredients
1delicata squash*
1tbspolive oilmore to coat, if necessary
¼tspsalt
¼tspblack pepper
½tbsponion powdermore to taste
Instructions
Preheat oven to 425. Rinse and dry squash. Chop ends and discard.
Slice the squash into 1/4 in circles. Use a spoon to remove seeds from each ring.
Toss rings with oil and seasonings, making sure to coat entirely.
Spread rings onto a baking sheet evenly, taking care not to overlap. Sprinkle more salt if desired.
Bake for 20 minutes. Flip and roast until golden brown, up to an additional 15 minutes. Enjoy!
