Ingredients

red cabbage*

zucchini*
or apple*

red onion*

garlic*

or brown sugar

apple cider vinegar

tbsp
butter

cup
water
salt + pepper
Instructions
First wash your produce. Peel and seed the apples or zucchini then cut into cubes. Slice the onion and red cabbage.
In a Dutch Oven or heavy-bottomed pot melt the butter on medium-high heat. Sauté the diced onion, zucchini or apples, and garlic for 2-3 minutes.
Add the red cabbage and vinegar, stir until combined. Then add the remaining ingredients and stir.
Reduce the heat to medium, cover the pot, and simmer for 50-60 minutes, until the cabbage is soft but not mushy.
Adjust the ingredients to your liking and serve hot.
