Ingredients
3tbspcanola oil
2lbJoia Food Farm ground lamb*
6potatoes*small, or 3 large. Cut into ¾ inch cubes. Peeling optional.
1onion*chopped
3clovesgarlic*minced
1tspfresh gingergrated
3tbsptomato puree
1tspground cumin
2tspground coriander
¼tspcayenne pepper
2cinnamon sticks
1 ¾tspsalt
¼tspground turmeric
3tbspplain yogurt
Instructions
Heat oil in a large skillet or a Dutch oven/heavy bottomed pot over medium heat, then add the ground lamb, potatoes, and onion and cook for 10 minutes, taking care not to mash the potatoes. The meat should be mostly brown.
Add the garlic, ginger, seasonings (except turmeric) and a couple of cinnamon sticks. Stir-fry for 1-2 minutes.
Cover with a lid for 2-3 minutes or until the potatoes are cooked through.
Remove the cinnamon sticks and discard (compost if possible!).
Add the yogurt and turmeric and mix gently, but well. Taste and adjust salt and pepper to taste.
Serve over basmati rice.
