1cupnut butter
½cuphoney*
2cupsrolled oatsOr gluten free oats
1cuprice cerealor a combination of flaxseed, chia seeds, hemp hearts, rice cereal, peanuts, slivered almonds, walnuts, etc
sea salt
2tspcoconut oiloptional
1/2cupchocolate chipsoptional
Instructions
Over very low heat stir together the nut butter and honey until just combined. Remove from heat. Pour into a large mixing bowl and add remainder of ingredients. Stir, stir, stir until ingredients are coated. If mixture is too dry, add melted coconut oil 1 tsp at a time, stirring well between each tsp, until mixture is fully coated.
Dump mixture into a casserole dish and press down with parchment paper or your hands. Refrigerate to harden up a bit.
Remove from refrigerator. Using cookie cutter of choice (we used hearts, any fun shaped cookie cutter will work) cut shapes out of granola mixture and place onto plate or parchment paper lined cookie sheet. When you cannot cut any more shapes, push together remaining granola mixture and flatten into an even layer. Continue cutting out shapes until you have used all the mixture.
Melt chocolate in a double boiler or in 30 second intervals in the microwave stirring often. Mix 1 tsp coconut oil in with the melted chocolate until smooth. Using a spoon or plastic bag with corner cut off, drizzle chocolate over granola shapes. Chill until chocolate is set, then enjoy!
