Ingredients
5slicesbacon*
3tbspreserved bacon* greaseor butter
1onion*chopped
4clovesgarlic*minced
¼cupall-purpose flour
2cupschicken* stock
2cupsmilkwarmed
1½lbspotato*diced
½cupgreek yogurtplain
1cupsharp cheddarshredded
salt + pepper
chives*for topping
Instructions
In a large stockpot, add diced bacon and cook until crispy. Transfer bacon to a plate, reserving the grease (if using).
Add onion and sauté for 5 minutes, until soft. Stir in garlic and sauté until fragrant. Stir in the flour to coat onion and garlic and cook for 1 minute. Then stir in the stock and milk, mix well and add potatoes.
Continue cooking until barely simmering. Reduce heat to low, cover, and simmer until potatoes are soft, about 15 minutes. Turn heat to very low.
Stir in cheddar and yogurt and reserved bacon. Serve warm, garnish with desired toppings. Enjoy!
