4slicesbacon*
3potatoes*large, chopped
2bell peppers*chopped
½onion*chopped
garlic*minced
Instructions
Chop the vegetables into 1 inch pieces. Cut bacon into ½ inch squares and fry to desired crispiness. Remove bacon from pan, reserving the grease.
Add all vegetables and garlic to pan and fry until potatoes are tender, stirring frequently. Add bacon back and stir gently. Best with an over-easy egg on top!
