Ingredients
6zucchini*
3eggplant*medium
2tomato*
2bell pepper*
1onion*
1headgarlic*
1tbspolive oil
salt + pepper
Instructions
Rough chop all of your vegetables
Place pan over medium heat and drizzle with olive oil
Add garlic and sauté for just a couple seconds, then add in the rest of the vegetables
Turn heat to medium-high. Cover and cook for 20 minutes.
Taste, adding salt and pepper as needed.
Serve as-is or on rice, pasta, chicken, or beef. Enjoy!
