Ingredients
2lbssweet potato*cut into ¼ inch sticks
2tbspolive oil
1tspgarlic powder
1tspsmoked paprika
salt + pepperto taste
Garlic Aioli
1cupmayonnaise
1tspsmoked paprika
1clovegarlic*minced, more to taste
pepperfresh-cracked, to taste
1tbsplemon juicefreshly squeezed
Instructions
Preheat oven to 400° F.
If making the aioli: Combine all ingredients in a small bowl and stir well. Taste and adjust seasonings. Chill until ready to use.
Line baking sheets with parchment paper. In a large bowl toss the sweet potato sticks with olive oil and seasonings.
Spread the potatoes onto 1 large (or two small) rimmed baking sheets. Bake for 15 minutes, flip, and continue to cook until crispy, about 10 more minutes.
