This delicious salad features fresh herbs and is a great way to enjoy zucchini noodles. This recipe is very adaptable and you can use almost any fresh vegetables that you have on hand so experiment as you wish. 1 spiralizer (A spiralizer is a kitchen device used to cut vegetables into long ribbons or strips resembling noodles or spaghetti. If you don't have one you can grate the zucchini or cut it into small pieces.)
1 Blender or Food Processor
1 Mixing Bowl
1 Tongues
Ingredients
1zucchini*medium sized or can use other spiralized veggies as desired
1 cucumber*medium
10cherry tomatoes*more or less based on your taste
1bell peppers*green, red, yellow or other pepper of your choice.
Dressing
1/4cupavocado oilor sunflower seed oil, olive etc.
1 avocado
1/4 cupbuttermilkor sour cream (optional)
2tbspapple cider vinegaror white wine vinegar
2 tbsplemon juiceapprox. the juice of 1/2 lemon
2green onions*or chives, shallot etc.
1/4 cupbasil*packed
1/4 cupparsley*packed
1/4cupdill*fresh dill leaves, packed or 1/2 tsp dill weed if not using fresh dill
1-2clovesgarlic*large cloves (adjust to your taste)
1/2 tspmustard powder
1/2 tspsaltadjust to your taste
1hot peppers*use one small hot pepper or 1/4-1/2 tsp cayenne pepper
1/4 cupwaterif needed to thin the dressing
Instructions
Spiralize zucchini and set aside (Note: you can cut or grate the zucchini if you don't have a spiralizer).
Dice cucumber and peppers into small pieces and slice cherry tomatoes in half or quarters. Set aside.
Combine all dressing ingredients into a blender or food processor and blend until smooth. Adjust seasonings and thickness.
Using tongues combine dressing with zucchini noodles. Mix to coat the noodles. Top salad with chopped cucumber, peppers and cherry tomatoes.
