Ingredients
2zucchinis*or summer squash*
2-3garlic scapes*minced
fresh parsley*and/or dill*, minced
8ozcream cheese
salt + pepperto taste
olive oil or butterfor frying
Instructions
Cut off the zucchini stems and slice lengthwise using a mandoline, knife, or vegetable peeler.
Fry the zucchini strips in olive oil or butter until soft and starting to brown. Remove from pan and let rest on a paper towel-lined plate.
In a medium bowl, mix together cream cheese, garlic scapes, herbs, salt, and pepper.
When zucchini has cooled slightly, spread on a thin layer of cream cheese mixture. Roll up the zucchini, and secure with a toothpick. Enjoy!
