Zoodles Primavera
Zoodles are a brilliant replacement noodle base for many gluten-free, lightened up noodle dishes! Learn how to prepare the zucchini noodles (zoodles) here. Ingredients
- 3 tbsp olive oil
- 6 green onions* sliced
- 2 cloves garlic* minced
- 8 oz mushrooms sliced
- 1 cup cherry tomatoes* halved
- 3 zucchini* spiralized
- ¼ cup basil* finely chopped
- ½ cup parmesan cheese
- salt + pepper
Instructions
- In a large skillet, heat olive oil. Add onions, garlic, mushrooms, and cherry tomatoes. Sauté until slightly tender.
- Add zucchini spirals. Sauté quickly just until tender. Add chopped basil and sauté one more minute.
- Remove from heat and sprinkle with grated cheese, salt and pepper. Serve immediately.
