  • In a large skillet, heat olive oil. Add onions, garlic, mushrooms, and cherry tomatoes. Sauté until slightly tender.
  • Add zucchini spirals. Sauté quickly just until tender. Add chopped basil and sauté one more minute.
  • Remove from heat and sprinkle with grated cheese, salt and pepper. Serve immediately.
