Zoodle Salad with Creamy Avocado Dressing
This delicious salad features fresh herbs and is a great way to enjoy zucchini noodles. This recipe is very adaptable and you can use almost any fresh vegetables that you have on hand so experiment as you wish. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer’s market.
Equipment
- 1 spiralizer (A spiralizer is a kitchen device used to cut vegetables into long ribbons or strips resembling noodles or spaghetti. If you don't have one you can grate the zucchini or cut it into small pieces.)
- 1 Blender or Food Processor
- 1 Mixing Bowl
- 1 Tongues
Ingredients
- 1 zucchini* medium sized or can use other spiralized veggies as desired
- 1 cucumber* medium
- 10 cherry tomatoes* more or less based on your taste
- 1 bell peppers* green, red, yellow or other pepper of your choice.
Dressing
- 1/4 cup avocado oil or sunflower seed oil, olive etc.
- 1 avocado
- 1/4 cup buttermilk or sour cream (optional)
- 2 tbsp apple cider vinegar or white wine vinegar
- 2 tbsp lemon juice approx. the juice of 1/2 lemon
- 2 green onions* or chives, shallot etc.
- 1/4 cup basil* packed
- 1/4 cup parsley* packed
- 1/4 cup dill* fresh dill leaves, packed or 1/2 tsp dill weed if not using fresh dill
- 1-2 cloves garlic* large cloves (adjust to your taste)
- 1/2 tsp mustard powder
- 1/2 tsp salt adjust to your taste
- 1 hot peppers* use one small hot pepper or 1/4-1/2 tsp cayenne pepper
- 1/4 cup water if needed to thin the dressing
Instructions
- Spiralize zucchini and set aside (Note: you can cut or grate the zucchini if you don't have a spiralizer).
- Cut cucumber and peppers into small pieces and slice cherry tomatoes in half or quarters. Set aside.
- Combine all dressing ingredients into a blender or food processor and blend until smooth. Adjust seasonings and thickness.
- Using tongues combine dressing with zucchini noodles. Mix to coat the noodles. Top salad with chopped cucumber, peppers and cherry tomatoes.
