Zucchini Roll-Ups
Think jalapeno popper, without the heat, but all the summertime goodness. Ingredients with an asterisk (*) are available seasonally right here in North Iowa! Click on select ingredients to find them nearby or stop by your local farmer’s market.
Ingredients
- 2 zucchinis* or summer squash*
- 2-3 garlic scapes* minced
- fresh parsley* and/or dill*, minced
- 8 oz cream cheese
- salt + pepper to taste
- olive oil for frying
Instructions
- Cut off the zucchini stems and slice lengthwise using a mandoline, knife, or vegetable peeler.
- Fry the zucchini strips in olive oil or butter until soft and starting to brown. Remove from pan and let rest on a paper towel-lined plate.
- In a medium bowl, mix together cream cheese, garlic scapes, herbs, salt, and pepper.
- When zucchini has cooled slightly, spread on a thin layer of cream cheese mixture. Roll up the zucchini, and secure with a toothpick. Enjoy!
